By the looks of the rear door panel in one of your first pics, they look fine, but if you're gonna touch up the cargo panels, you kind of have to. The problem will be those wood inserts. They're heat bonded to the vinyl, so you'll have to tape them up first - they don't come off. Did you get the rear cargo panels too? If I find another one, I'm gonna modify the passenger side to fit another door and store a decent tire jack in there.
I got all the plastics so the rear area is all "new" including the carpet. In my pics the dark blue is old and the lighter blue is new. I was just debating on the door panels but they do coordinate with the seats as they are both dark and light blue.
You answered your own question? I think you should leave it, if it's that close. The SEM product is great, but like any surface finish, it would need periodic touchups.
Steve, did you get a chance to put down any dymat (dynomat; dynamat...u know what I'm talking about..) while the interior was out? Oh....and sorry I'm not in the area anymore to pitch in......

Andy and I went looking for an electric engine cooling fan, yesterday, and he got a nice one. I spotted an LTD sedan with a nice dark brown/olive interior and the wire discs. He decided that he'd work with his Mustang buckets or nice bench seats, but he really liked the color. When I went to bed last night, I couldn't sleep until I decided whether to go for the interior or not. I did, fell asleep and we went back today to get the whole kit and caboodle. Didn't take the upper trim, just the trim at floor level and door panels. Nice. $60 CDN$. Not bad. Anyway, we lifted the carpet and there was no sound deadener, just the cleanest paint on a floor that's been hidden since 1983. Wow! I wondered what you did to handle any fading on the tops of the seats? Same fabric as yours only dark brown. My wife loves chocolate. PS: That LTD II 4-door sedan weighs in at 4355 POUNDS! Only a small V6. Factory power door locks on all 4 doors. I was tempted, but I don't have time. Are they ever small solenoids!

I'm threadbare! Do you have any idea what takes the fading out or restores the colour? It's nylon and only faded on the window side of the buckets and the top of the rear seat. I'm going to use the Bissel steam cleaner to clean them and the carpet up. Still need to get a front passenger map pocket, below the armrest, and rear passenger armrest for that style of door panel. Who knows, TBird might have spares.
Before you get too excited check out the floor mounts for the front seats. There could be a difference. My 82 the floor mounts are 13" apart and the 84 I got the interior from was 14". The problem is that the seat rails on the bottom of the seats are also wider apart ont the 84 so the seats wouldn't bolt right in without modifying the "feet" that attach to the floor. Hopefully the 83 will be the same for you. As to fading the only thing I can think of is re-dying.
Thanks to Andy, I set up a "discovery" thread about fading and decided I'd try one of the Oxy-clean type products to get it right. http://www.stationwagonforums.com/forums/showthread.php?p=44290 Yeah the 83 looks like it'll fit perfect, it had an inside jog to fit to the stock studs. Have you got the Front Passenger map pocket and rear passenger armrest from either of your old ones?
