Jeremiah, at one time, COE rigs were going to be the standard on the Interstate highway, for safety reasons, but as it turned out, the suppositions were backward and BS, so in one of its last acts before dissolution by Congress in 1980, the ICC removed the restrictions against conventional cab trucks, and for the most part, cab-overs have almost disappeared from American highways.
And now they are a rare sight on the highways and byways of America. Kind of like the station wagon. I suppose that's one of the reasons why my boys like them so much. To see one on the road these days is a rare occurrence.
