    If I go to meet my maker before another sunrise, I can say without hesitation IT'S BEEN A GREAT RIDE. None of us get thru' this world unscaved or out of it alive.     According to the Dark Bacardi label it's 40-proof. The good stuff from Jamaica or Cuba. 1873 Bacardi. The wife soaks the raisins, currants, cherries separately for a week, before they get mixed in, and I use 2 cups in the Mollasses which she mixes into the batter. Makes 7 cakes - 2.5 lbs each. 1.75 hours in the oven, wrapped in aluminum (no evaporation) at 350 F. This was the best batch we made since 1997. Perfect brown top and no burnt cake. Nummers. I got to clean out the cake pans - :biglaugh:). She won't let me have a slice until 2 weeks from now. They have to mellow out/mature. Worth the wait.
