And I'm not sure what is being shown here - is that a piece of sheet metal hiding the lip of the rear tail gate? Wonder why that's there?

I am not sure what is on the back seat. I wonder if it is a baby seat that folds over onto the back seat.

that piece supports the back rest when the rear seat is folded flat. It stradles
the driveshaft hump on the rear floor.

Looks like a new old stock patch panel for the rear floor to tailgate opening to repair the rust back there.
